DIY Coffee Filter Wreath

I was looking on Pinterest one day and saw this very simple and easy wreath to make so I had to try it. All you need is 3 items. Coffee filters, a wreath and hot glue gun. IMG_6528

The coffee filters I bought at Costco for about $5. The wreath I bought for $2.50 at Walmart and the hot glue gun I had already.

I took one coffee filter out, pinched the bottom together and glued it to the wreath. I did that until it was as full looking as I wanted. It took me about 2 hours, only because I have a two year that wanted to help. This was super easy, super cheap and it looks great! IMG_6530

I wanted to decorate it for Christmas so I bought some ornaments at Target for about $5 and hot glued them on the wreath. IMG_6633I think it looks great and I will definitely be making more soon! And next time maybe a little bit fluffier 🙂

DIY door draft stopper

I have been looking into buying a door draft stopper recently and discovered that it is super cheap to make your own. It was super simple and took me 10 minutes tops to make. Just takes a little sewing and two inexpensive items.

Rice and material

I had left over material that I needed to use and I bought this 25lb bag of rice at Costco for $10. I thought I needed a lot (not this much) but I actually didn’t even make a dent in this bag HA. I had a few doors to do so I got a huge bag.

I measured the door width and added 2 inches to each side. Turn the material inside out, put them together and sew.  I stitched one end together and then the long side together.  Turn the material right side out. Added the rice. Stitched the last end up and Voila!IMG_6625

We paid off how much?!

 

When we set out on this “getting out of debt” stuff I was not very happy.

The first year of marriage and my whole life I/we never really paid attention to saving or managing my money. We spent money on things that we wanted and not necessarily needed. Ate out a lot, had a flease (a Dave Ramsey term for lease) and or car payments, didn’t budget and just wasn’t really caring about our debt. Car payments, credit cards, hair appointments, etc….we were apart of the “normal”. Well, one day my husband mentioned Dave Ramsey to me. I do not like the whole get rich quick stuff. So I did not buy into it right away. BTW Dave Ramsey is not a get rich quick guy. I was sitting down and writing the entire list of bills for us. I was trying to figure out how to stay at home with our new little one and still afford life. I almost had a panic attack when I found out that in order for me to stay at home I would need to have $1000 more a month. And that is when it hit me. We had debt and bills that were just outrageous. Then he brought back up Dave Ramsey and I said ok. I started to listen to his podcasts and it was such a relief to hear such amazing stories about people like us.

I was, at that moment, on board.

I did everything I could to cut the budget down. We traded in our flease for a vehicle that cost $20,000 less. That right there saved us $200 a month. I stopped going to get my hair done every 4-6 weeks. Being a platinum blonde is expensive ya’ll. We stopped going out to eat after church. We buckled down. We got our first baby step done and we started on baby step two. We ate on a beans and rice rice and beans budget. And no, we did not just eat beans and rice ha! I’ve actually been super healthy and was in really good shape not long after we started our budget. Sold so much stuff our dogs thought they were next. Ha! It’s amazing how much stuff we had. Well, soon enough we were all of a sudden thousand of dollar paid off. My husband worked so many hours just to get us above water and pay off this stinking debt. My husband is truly my hero, really, my hero. I really admire him. I did some surveys and mystery shopping to try to get a little more money for us. We were gazelle intense.

Thankfully, we got a job offer to transfer across the country to a beautiful state. We were able to sell our home in one month and move. Thank the Lord! It was a lifesaver. We sold one vehicle before we moved and are down to one vehicle that we barely use. My husband rides his bike to work, no more commuting!! And a great workout. We are just loving it over here. When it isn’t way to cold we ride bikes and walk everywhere. I was looking at our debt payoff so far and I was absolutely floored at how much we have managed to pay off and I get to stay at home with our little one.

All because we opened our eyes and are living like no one else so we can live and give like no one else.That’s amazing ya’ll and it takes a lot of dedication. I haven’t had too much support outside our little family. I have heard that I need to enjoy and live life…..Well, we do and love our life. And, soon we will be loving it even more. People were making fun of the way we live on a beans and rice, rice and beans budget. Like Dave Ramsey says; If broke people are making fun of your financial plan, you’re on track. Let me tell you….we are a million times less stressed. I only have to pay a few things a month instead of a list HA! We do not charge anything on a credit card, so if we don’t have the cash right then, it’s a no. People say, “don’t you need a good credit score to live in this world?” HAHA NO! Cash is King, baby! We are not “normal” because of that. It’s amazing how credit cards and living beyond your means are “normal”.  Car payments, “normal”. I like what Dave says “I’m not against people having new cars. I’m against them having you. We spend a tremendous amount impressing somebody at the stoplight who we’ll never meet. It makes you broke and keeps you broke”. So true. You know the average car payment is $400 something a month. yikes! I am so thankful we haven’t had a car payment in forever. A paid for car drives a lot better….if you know what I mean 🙂

We are so fired up about getting out of debt that we are almost done. It sounds like a super long time but we should be out of debt in 1 year and some change. We cannot wait to call Dave on the day we make our last debt payment and do our debt free scream. We are on a pause since we have a baby due in June but after that its game on.

If you are where we were or you have to work two incomes to afford life…..just give it a chance. Listen to Dave Ramsey and be “weird”! I did not think this would be possible and actually thought it was just normal to have a credit card, car payment, living paycheck to paycheck and not being on a budget. I now know, I was wrong. I thank God for bringing my husband into my life and opening my eyes to Dave Ramsey.

And, like Dave always says at the beginning of his amazing show-Debt is dumb, cash is king and a paid off home mortgage has taken the place of the BMW AS the status symbol of choice.

Apple crisp recipe

I have loved making Apple crisp for the longest time. Our family just went apple picking last weekend and it was so much fun. Here is the recipe that I made. Hope you try it out, it is now our family favorite. Our son loves to cook with me….or eat what I’m trying to make ha ha

   
 

Ingredients:

10 medium apples

1/2 cup white sugar 

1 Tbsp all purpose flour

1/2 tsp cinnamon

1 tsp allspice

1/2 cup water

1 1/2 cup oats (I used regular not quick oats)

1 cup flour

1 1/4 packed brown sugar

1/4 tsp baking powder

1/4 tsp baking soda

1/2 cup butter, melted
Directions:

Preheat oven to 350 degrees

Place the sliced apples In a large mixing bowl. Mix the white flour, cinnamon and allspice together and sprinkle it on top of the apples. Mix the apples thoroughly to make sure all apples are coated. Place apples in a 9×13 inch pan or oven safe pan similar to that size. Pour 1/2 cup water in the pan, I tried not to our it on to many apples. This is so the apples stay coated and the water helps the apples bake better. 

In mixing bowl; mix oats, brown sugar, baking powder, baking soda and melted butter together. Mix with a wooden spoon until it is all “wet” looking.  

 
Sprinkle oats mixture over apples, make sure it is evenly spread. 

  
Place in preheated oven and bake for 45-60 minutes. Apples should be soft. Mine took 60 minutes because I cut apples a little bit thicker. Just check yours at 45 minutes and gauge the cook time from there. 

Take out and enjoy! We love our hot and with vanilla ice cream.

Apple picking and family fun at the farm

We had our first “outing” here in Virginia since we moved here a few months ago. We wanted to do a fun family day and came across Great Country Farms in Bluemont. They had a lot to offer at the farm so we picked that place to go. It took us about 45 minutes to get there and it was an incredible drive. There wasn’t a part of that drive that was ugly or yucky to drive through. I believe we found a new location to live when we buy a house again. The new homes here are incredible and you get so much! The prices aren’t the cheapest for new homes but I’d rather get a new home here than California any day. I never thought I’d say that but it’s true!  This just a glimpse of how gorgeous the drive was.

When we got the the farm you have to pay admission but since my husband is a veteran we all got in for free. I absolutely love places that recognize veterans, you’d be surprised by how many place only give discounts to active military. The first place we went was straight to the tractors. Our son love all boy things, seriously.   

  
Then off to the cow ride that gets pulled by a tractor.

And so much more to list. The last place we went was on the tractor so we could go pick apples. This was our first time picking apples and it was fun but so fast. We were exhausted from the farm fun and it was the hottest part of the day. Here are a few pictures to show you how much he loved the tractor ride.

 Holy macaroni the donuts were so darn good. I need to learn how to make them. The first thing I made with our apples was Apple crisp. So darn yummy!!! I’m going to post the recipe next.

I highly recommend this farm if you are looking for a fun place to go with the family. We are hoping to go back for Halloween fun.

Easy Football foods

Well, football is officially here and this house is very excited! We are on the east coast now So our games are later and we have to stay up super late to finish the games. A bummer but it means we need more snack foods. I posted a flautas recipe yesterday that would be perfect for snacking on. Today I am sharing my 7 layer bean dip and a look at our football pizza. I make the same recipe for the pizza but just change the ingredients or look. Its fun and cooking should be fun! Here is what our football pizza looked like before I put it in the oven

On to the bean dip recipe.

7 Layer Bean Dip

Ingredients:

Black bean refried beans (or regular refried beans)

Cheese sauce (I used tostitos)

Ground beef (I used taco seasoning for flavoring)

Avocado mashed up

sour cream

shredded cheese

olives

Directions:

In a 9×9 pan spread black beans (the first layer) on the bottom. Next spread cheese sauce over the black beans. Sprinkle the ground beef mixture on top of the cheese. Next, carefully spread the mashed up avocados over the meat. Next, even more carefully spread the sour cream on top of the avocados. I try not to move the avocado mixture when spreading the sour cream so it looks better. Sprinkle on the shredded cheese and after that sprinkle on the olives. And voila! Done! bean dip 4

Dish it up and enjoy. It is super easy, yummy and something you can eat throughout the day. This is one of my favorite football foods.

Easy Baked flautas

I wanted to use ingredients I had on hand and came across flautas online. I’ve had them at restaurants but have never attempted homemade. I came up with my own version and they turned out so yummy! Here’s my recipe, feel free to use your own ingredients you have on hand. But this is a really yummy mixture. Also, if you are looking for footbal foods this would be perfect! 

Ingredients:

1 package of flour tortillas

3-4 cups spinach

Ground beef (I flavored it with taco seasoning) 

Brown rice

Shredded cheese

1 cup black beans, drained 

1-2 tsp olive oil 

Softened butter or olive oil for coating

A glass of wine or a beer-to drink while your cooking of course! Cooking should be fun! 
Directions:

  • Preheat oven to 350 degrees
  • Cut up tortillas into quarters
  • Chop up spinach and put into a pan on the stove. Add 1 tsp of olive oil and cook until wilted, about 3-5 minutes. 
  • Mix ground beef, black beans and brown rice together
  • Put a small amount of ground beef mixture onto the outer curved part of the quartered tortilla. Next to it (on the inside) add a small amount of spinach. After that put a small amount of shredded cheese. Here is what mine looked like

  • Roll up from the outside in and place on a pre-sprayed cookie sheet. Continue until you fill the pan up. 
  • Take softened butter or olive oil and rub onto flautas. This is to make sure the flautas get crispy or flaky. Mine looked like this. I tried both to compare. I like the olive oil a little bit better but they both taste amazing.   
  • Put into oven for 15 minutes, take the, out and enjoy! They should look like this

I served them with cheese sauce, sour cream and avocado.

Rainy day schedule means I get to cook and bake more

Here in Virginia we get a lot of rain! I am not used to all this rain because we lived in California just a few short months ago……and it hardly rains there. We are absolutely loving Virginia and hope to stay for a long time. Luckily we have a gym where we live so I can still be active indoors instead of the normal outdoors. I have to workout a lot so I can eat a lot. Ha! 

Today I make some really yummy cookies, it was a new recipe and I will post it on here soon. It was peanut butter, oatmeal, chocolate chip cookies. I know, I make a lot of cookies but I can’t help it. They are a family favorite! Here is a sneak peak Athlon they came out.  

  Right now I am in the process of making my own version of flautas, I am really excited! This is my first time and it’s not all the usual ingredients. I like to change things up.  I will post the recipe and how they came out later tonight. I hope everyone is having a wonderful weekend so far, I know we are! What an fun Labor Day weekend

We just recently moved to Virginia and we are having a blast so far. I have always wanted to move out of California! Always! People told me throughout my entire life that I’d miss the beach, California has the best weather and always ask-why would you want to move out of California? Life is also beautiful outside of California! We love it here. We recently discovered Cub Run trail, it is one awesome trail! There are a few bridges and you can actually ride your bike through the water if you like. Here are a few pictures so you can see how amazingly beautiful it is here!

We went on a few bike rides this weekend and logged almost 20 miles altogether. If we weren’t this active I’d be 200 lbs y’all lol hope you enjoy the picture! We had a blast biking and bbqing on this amazing Labor Day weekend!

The best Oatmeal raisin and chocolate chip cookie recipe

I have been searching for a really good oatmeal raisin cookie recipe and I finally found it….but added a few things. I hope you make these and enjoy them as much as our family is. 

Ingredients:

2 cups all-purpose flour

1 tsp baking soda

1 tsp baking powder

1 tsp salt

2 tsp cinnamon

1 cup unsalted butter (I leave mine on the counter all night or during the day to naturally soften)

1 cup sugar

1 cup dark brown sugar, firmly pressed

2 large eggs

2 tsp vanilla (sometimes I add 3 tsp, more the better )

3 cups oats (regular oats not instant)

1 cup semi sweet chocolate chips

1 1/2 cup raisins
Directions:

Preheat oven to 350 degrees

Mix together; butter, sugar, brown sugar, eggs and vanilla. 

Whisk together; flour, baking soda, baking powder, salt and cinnamon and add to wet ingredients. To help the flour from being over mixed I mix the dry ingredients into the wet ingredients with a wooden spoon. If you mix the flour ingredients to much it will make the cookies flat and harder. 

Add chocolate chips, oatmeal and raisins. Mix slowly and not to much. 

Use a cookie scoop to on baking sheet. I have three different sized cookie sheets and on the biggest one I have 3 cookies across and 5 cookies down. 

Cook for 12-14 minutes. Since I put in 3 baking sheets I rotate the cookie sheets so the cookies cook evenly. 

Take out, place on a cooling rack and try not to eat to many ha ha
