Friday pizza night

Our family tradition is to have Friday pizza nights. It’s like a celebration for making it through the workweek. Yes, I do not go to a corporate job but I am always on call 24/7 so we all get to celebrate our work week ๐Ÿ˜‰  so Friday I decided to make a pineapple, broccoli and red bell pepper pizza. Holy cow it was amazing! 

I used my pizza recipe that I posted on my blog. For the toppings I pre cooked them on the stove until they were just barely cooked. I added about a Tbsp of olive oil to add some healthy fats in there. 

  

I have to say, if your are looking to make some yummy, easy and simple pizza this is perfect! Our family loves this pizza recipe and sometimes we make it more than once a week. This is the end products and I wish I made more, maybe tomorrow……ha ha

It’s pizza time!

This is the easiest and yummiest pizza recipe I have made so far! I absolutely love making homemade pizza from scratch and I have different toppings every time! This is a must make recipe ๐Ÿ˜ƒ

Ingredients:

1 1/2 cups hot water

1 Tbsp. sugar

1 Tbsp yeast (freischmann’s active dry yeast) 

1/2 tsp salt

1 tsp granulated garlic

4 cups all purpose flour

Directions:

Preheat oven to 425 degrees.

Combine water, sugar and yeast into mixing bowl. I have found that the best way to have a no fail yeast rising is to warm up the bowl you are going to put it in first. I put really hot water in the bowl and let it sit for a minute, dump it out and then add the ingredients. Let it rise for about 5-10 minutes.

Add salt, garlic and flour and mix well. Dough sound not be super sticky. 

I put 1/2 cup flour on a dry and clean surface and roll out into whatever shape you are making your pizza. Today we did a rectangle pan pizza. We do circle, rectangle and hearts normally.

Place dough in a greased pan. I use the Kirkland brand of Pam. 

I roll the sides in

Put on ingredients. I used semi cooked broccoli and onions today. I normally use what we have on hand to save money. 

Place pizza in preheated oven at 425 degrees. I cook the pizza on the second rack from the bottom for 20 minutes and the. I put it on the top rack for 7 more minutes. 

Take it out, cut it up and enjoy!

   
 This really is such a yummy pizza it’s hard to just eat two pieces! 

From start to finish it took me a little less than one hour.

Chocolate chip cookies

Ok first, make yourself a cup of black coffee. No seriously, that’s one of the ingedients that make this recipe so yummy. If you don’t like coffee or do not have coffee don’t worry, just use hot water instead. But it really make the flavor pop in chocolate chip cookies. 

Second, turn on some music! My son and I love listening to Taylor Swifts station on iheartradio. If at anytime a fun song that you love to dance to or your kids love to dance to just take a break and dance with them. It makes life fun and it’s a great bonding experience with your kids. When Shake It Off comes on we always dance around the room, it’s so much fun!

I found this recipe online and changed it a bit, just like almost all recipes I find.  
Ingredients:

1 Cup softened butter (I’ll leave mine out all day to naturally soften) 

1 Cup white sugar

1 Cup Packed brown sugar

2 eggs

2 tsp vanilla extract

3 cup all purpose flour

1 tsp baking soda

2 tsp hot black coffee

1/2 tsp salt

2 cups semi sweet chocolate chips
Directions:

  • Preheat oven to 350 degrees
  • Dissolve baking soda in hot coffee in a bowl and set aside. 
  • Put butter, white sugar and brown sugar in mixing bowl. Mix until creamy and smooth 
  • Beat in eggs one at a time
  • Add to the coffee and baking soda mixture along with salt and vanilla, mix together
  • Stir in flour until it is blended together but do not over mix. 
  • Add chocolate chips and mix with wooden spoon 
  • Use cookie scoop (I use the Wilton 8″ stainless steel cookie scoop) to put cookies on cookie sheet. I have three different cookie sheet sizes and the biggest one I put 3 cookies across and 5 down
  • Bake for about 11 minutes or until edges are nicely brown. 
  • When done let them sit on the cookie sheet for a minute to relax and then put them onto cooling rack. 

 

Enjoy a hot cup of black coffee while baking, might as well since the cookies need them anyway ๐Ÿ™‚

Easy flour tortilla recipe

Our family absolutely loves flour tortillas. But, we do not all the ingredients in the store bought tortillas. I found a recipe that I altered a bit and it’s so yummy! 

Ingredients:

2 cups whole wheat flour

2 cups all purpose flour

1/2 tsp salt

2 tsp. baking powder

2 Tbsp. softener butter

1 1/2 cups water
Directions:

Mix flour, salt and baking powder in mixing bowl. Mix butter with fingers or wisk until it looks like cornmeal. Add water and mix with wooden spoon until it comes together. Sprinkle a half cup of flour on dry surface and knead dough until smooth and elastic. Divide into 26 pieces and roll each one into a small ball. 

On stove, Preheat pan on medium heat. On lightly floured surface, Roll each ball out into thin 7 inch round tortillas. (Do not over flour the pieces) Place into preheated pan and cook for about a minute on each side. It needs to bubble before you flip it to the other side. (Do not leave in the pan for to long or else it’ll turn out hard.) I put them immediately into foil to keep warm and so they do not get hard. When I put them immediately into a foil wrap all together they stay soft and amazing for at least a week. If you have a tortilla water that’ll work great also, we just do not have one.

Craving pizza on a budget?

Need a fast lunch?

Craving “pizza” but don’t want to pay a hefty price for pizza?

Do you have pasta sauce? Cheese? Left over hot dog and/or hamburger buns?

Here is the solution and it only takes about 10 minutes. 

“pizza” finished and packed to take to our daily family picnic at the hubby’s work.

We have been making this style of “pizza” for as long as I can remember as a kid. 

Preheat the oven to 425 degrees

1. Separate your hamburger and/or hot dog buns.

2. Spread pasta sauce onto hamburger and/or hot dog buns

3. Spread cheese onto hamburger and/or hot dog buns

4. Put into over and keep an eye on it. I typically let the cheese melt and then turn it to boil and make them  toasted. 

And, voila, Done! 

Super easy, cheap and you can get rid of the left over hamburger and hot dog buns. Woot!

Big cooking day over here at the Lucio house

Today I will be making more whole wheat bread and I’m gonna try to add more oats. I’ll be sure to update the recipe if it works out better. The bread goes fast around here! I will also be making the following; my frugal beans, rice, chicken and bell pepper mexi style dinner that’ll last us a week or longer, flour tortillas and if I possibly have time I’ll be ending with my favorite chocolate chip cookies! I’ll be sure to post the recipes for everything throughout this week ๐Ÿ™‚ Including our homemade pizza recipe I make on Fridays that is super yummy!

Whole wheat bread with oats and almond milk recipe

I know what some of you might be thinking…..gross! But hear me out. I am experimenting with different recipes to make our “normal” every day’s foods a little bit healthier. I came across a recipe and had to try it out. I altered it a bit and it came out amazing! I have to share my version of this recipe. 

Ingredients:

1 cup water

1 cup almond milk  (I used vanilla unsweetened 30 calorie Silk Almond Milk)

2 1/4 teaspoons (Fleischmann’s active dry yeast)

2 tablespoons honey (sue bee)

4 cups whole wheat flour (King Arthur whole wheat , whole grain flour)

1 cups all-purpose flour (Costco brand)

1 cup rolled oats (Quaker oats, regular)

4 tablespoons unsalted butter, melted and cooled slightly (Costco brand)

1 teaspoon salt (mortons) 

Directions:

In a microwave safe bowl Combine water and almond milk and Microwave for 30 seconds until warm. Add yeast and honey. Let mixture sit until yeast is foamy. 

Pour into mixing bowl

Add flours, oats, butter and salt. Using a dough hook, knead on medium speed about 6 minutes until dough is smooth, elastic and only slightly sticky. Keep dough in bowl and cover with a clean kitchen towel. Let rise in a warm place about 1 hour until doubled. I check mine at about 30 minutes and it’s normally close to doubled. 

When dough is doubled, punch down and transfer to a lightly floured surface. Press into an 9×9 inch square, tuck sides in (about 1 inch each side) and roll up into a log. Press seems together to seal the dough. Transfer to a lightly greased (Pam or butter) 9×5-inch loaf pan, seam side down. Cover with the same clean towel and let rise about 30 minutes until dough reaches the edges of the pan.

Heat oven to 400 degrees F (375 degrees F if loaf pan is dark or nonstick). 

Bake 40-50 minutes. 

You can rotate the pan halfway through but not required. 

Bake until loaf is deep brown on top and bottom sizzles when you tap your wet finger on the bottom of pan. (FYI: That is how our family has always done it but be careful not to burn yourself. I have never burnt myself but if you haven’t done it before just remember to tap the bottom with a wet finger not hold your finger there.)

Let loaf sit for 5 minutes and then remove from loaf pan onto a cooling rack. I normally cut the bread and put butter on it soon after so I get to taste the freshest bread ever ๐Ÿ™‚

Beans and rice, rice and beans

If you know anything about Dave Ramsey you know exactly what I am talking about. If you haven’t heard of him then I highly recommend googling him and listen to his podcast. Me and my husband have been on his Financial Peace program for almost two years now. We have had a lot of ups and downs and have not been “perfect” on getting out of debt. But, we are constantly learning and striving to get there.

So you might be asking, so what the heck does beans and rice, rice and beans have anything to do with this. Well, it is a way of eating when you are strapping down and getting out of debt. Does it mean you literally have to eat beans and rice all the time….no but it is healthy ๐Ÿ™‚ I personally have noticed that I feel better eating beans and rice. I guess it can technically be a vegetarian “diet” but we do add meat in small amounts to mix it up. Over the next few posts I will be providing easy recipes that have beans and rice in them. I have gotten pretty creative with our meals and they turn out pretty darn good. I also have been learning tricks on spreading our meals “thin” to make the most of our food and money. Our family loves it and it is less expensive than most meals out there. Oh and pennies compared to fast food! We do like to eat out occasionally but that is normally to Chick fil a and Texas roadhouse . We still live but just limited to spending a ton of money.

Tonight I will be cooking one of our “mega” beans and rice meals and will be posting that tonight or tomorrow so you can see what I am talking about. Stay tuned, this is very exciting for me ย to share our beans, rice and other sort of recipes. And also, stay tuned for our first football food night this Thursday and family homemade pizza Friday’s. This is ONE very exciting week!

I absolutely love blogging, I used to blog years ago and have finally come back to it. I took a break from blogging due to just getting married and having a precious baby boy. ย I absolutely miss blogging, sharing ideas, tips and recipes. Please come back next week for my First blog.
