Clothes shopping excitement 

I wanted to do a happy dance at Target yesterday, but I don’t like walking on store floors without shoes on LOL I have literally achieved a lifelong goal of losing weight and being in a size I’m comfortable at.  I am officially in a size 4 in jeans and a s-xs size shirt. Blows my mind!


 Even though I think some brands run bigger, I have never been this size before. When I got pregnant I was told by many women that I’d never lose weight again. I felt defeated. So I made it my ultimate goal to show everyone I could. Two kids and almost 5 years of marriage….goals met! Cheers to hard work and being a fitmom.

If you are pregnant and have been told this, don’t listen to those women. Maybe they are a bit bitter that they never lost the weight. I’m not entirely sure but don’t listen to them. When I got married I was a size 10 in jeans and a med-large shirt size. And I am now a size 4 and sm-xs. It can be done. In my lifetime, when I was single I even went up to a size 16. Yuck! I was incredibly unhealthy and I will never be that size again. I know people say it’s not the number that matters, but I know what I felt like to be that heavy and it was not fun. It uncomfortable. 

I literally am not on any special weight loss program, don’t belong to a gym, just doing what I can and working out at their nap time. I fit in workouts when I can and snack all day. If you stick your mind to it you can achieve your goals. Even if you “don’t have time” there is literally time in everyone day to do something. Just think about everything you do in a day, I bet there time. Just make time 😉 At first it seems “hard” but it gets easier, I promise. Wake up 1 hour earlier…..everything is achievable when you stick your mind to it.

Yummy and Healthier Pancakes

Our family absolutely loved this recipe. It’s easy, fast and we had all the ingredients already. Nothing out of the ordinary is needed for these pancakes. I even was able to try out the new avocado oil from Costco. I love the healthier oil options we have these days. (Picture below) I hope you get to make these and enjoy them as much as we all did. And not to mention….toddler approved 🙂


Ingredients: 

1 cup Unbleached all-purpose flour or whole wheat  flour (I used 1/2 cup unbleached flour and 1/2 cup whole wheat flour and only King Arthur brand flour)

1 Tbsp Raw sugar

2 tsp Baking Powder

1/2 tsp Salt

1 cup Silk Almond Milk

2 Tbsp Avocado oil or Melted butter (I used butter the first time around)

1 Egg

1/4 tsp All Spice

Splash of Real Vanilla
Directions:

1. Whisk together flour, sugar, baking powder, all spice and salt in a small bowl.

2. In a separate bowl, whisk together Silk, oil/butter, vanilla and egg.

3. Add flour mixture to egg mixture and stir with a wooden spoon just to moisten—a few lumps are fine.

4. Cook pancakes on a cast iron pan with avocado oil over medium heat. I put just enough oil to cook the pancake, maybe 1/4 tsp.

5. Cook until you see little bubbles and flip, continue cooking until done. Maybe 1 minute longer once flipped.
I served these delicious pancakes with uncured turkey bacon from Costco (I highly recommend this turkey bacon brand-picture below) and scrambled eggs with almond milk whisked into the eggs.

Red Velvet Baked Donuts with Cream Cheese Frosting

Ok, so I have to get this out of the way. My donuts are not red because the recipe calls for 1 Tbsp of red dye and we had 1/2 Tbsp…..so we used all the dye colors HA! They are green and might do this for St Patrick’s Day coming up.

I found this recipe about 1 minute after my son and I decided to make donuts. They are amazing!!! So good I wanted to eat way more than one at a time. I highly recommend recipe for baked donuts.

 

Ingredients:

3/4 Cup Granulated Sugar

1 1/2 tsp Unsweetened Cocoa Powder

1/2 tsp Salt

1/2 tsp Baking soda

1 1/4 cup Unbleached all purpose flour

1/2 cup Buttermilk (I used almond milk and vinegar to make mine)

1/2 cup and 2 tsp of vegetable oil

1 egg

1/2 tsp vanilla extract

1/2 tsp vinegar

1 Tbsp red food coloring

 

Cream Cheese Frosting Ingredients:

1 cup Powdered Sugar

1 oz Cream Cheese

1/2 tsp vanilla extract

1 tsp of almond milk or regular milk

 

Directions For The Donuts:

  1. Preheat oven to 350 degrees
  2. Spray donut pan with non-stick spray
  3. In a large bowl add flour, baking soda, salt cocoa powder and sugar. Mix and set aside.
  4. In a medium bowl, whisk together; egg, buttermilk, vegetable oil, vanilla, food coloring and vinegar.
  5. Pour the wet ingredients into the dry ingredients and whisk together. Do not over mix but mix enough so you do not have clumps in the batter.
  6. Fill the donut ring, I filled it to the top of the donut mold but not high enough to cover the middle.
  7. Bake for 12 minutes. Take out of the oven and let them cool on a cooling rack for a few minutes.

Directions for the Cream Cheese Frosting:

  1. Combine the Cream Cheese, powdered sugar and vanilla in a bowl. Mix (whisk) until all together.
  2. Add 1 tsp of almond milk or regular milk and mix until creamy. If you need to add more to get the perfect consistency, add a very small amount at a time.

I dipped the cooled off donuts in the frosting until coated on one half of the donut. You can add sprinkles if you like. And oh my goodness….they taste amazing!! Enjoy!!

Goals Met….and Homemade Pizza Recipe

I firmly believe if you set your mind to something you can achieve that goal.

This morning when I put on my pants I was able to tighten my belt one notch!! That is amazing!

My first goal was to lose the weight I gained, check. I was at my pre baby weight way faster than last time. Thankfully! I am also at my first weight goal-125 lbs. That has honestly been my goal almost my entire life. For some reason being this exact weight I feel great! I know that if I were famous I would be considered obese, but I’m not.

The second was to get stronger than I have ever been, check.

I have no idea why it is easier this time around. Maybe I have a bit more motivation since I know I will not be getting pregnant again.

My next goal is to tone up more and lose 5-10 more lbs. I just want to be a bit slimmer and toned more. If they are right about holding onto 10 lbs of fat when you are breastfeeding, then Ill just have to wait for a year and a half if he breastfeeds that long, Lord willing.

I want to encourage to women who have negative people around them. Especially about baby weight. It is possible to lose the baby weight, it is possible to workout when you have children, it is all possible. I am super thankful to have a supportive husband also. Without him, this all would be a lot tougher.

Get up and go.

I used to have all the excuses in the world not to get up and workout but I feel SO amazing after. I just keep going and training my body in different ways so I don’t get caught up in the mundane. I also limit my cardio and lift more weights. I used to be more about cardio but I really want to just tone. I am pushing my body more and more and constantly.

Also, kids love to be active and if you are active with them then you can get a lot of exercise. Don’t forget to eat healthier. I am not the healthiest eater but I do not over eat, that’s for sure. Except when it comes to pizza nights. Every Friday I make homemade pizza…..YUMMY! Speaking of pizza on Friday nights, I am off to start making it! Have a wonderful weekend!

Awesome Workout: Feel the burn

I just did made up this workout this morning and wow does it burn. I loved it SO much I had to share. This week I have been killings it at the gym and it’s starting to feel awesome! Thankfully. I’ve started doing none weighted lunges daily and at least 36 push-ups daily. 3 sets of 12. Thankfully those are getting easier to do also. I have to add that on top of this workout I did 20 minutes of cardio and weighted back workouts. Awesome workout overall today!

So here’s the Workout Burnout:
12 crunches

12 bicycle crunches

12 push ups

12 side plank dips

20 outside leg lifts

20 inside legs lifts

Kefir….no thanks

I have been curious about how I would feel after trying a few foods. We have been getting sick left and right after we started letting our boy go to Sunday School. We are a family that never gets sick. Ok, maybe once a year and it last’s about 3 days total. Now, since he has been going to Sunday school every week we have been sick all the time. He loves Sunday school so that is not really an option to not have him go. So I researched things to “boost” our immune system. One thing it said was that you literally cannot boost your immune system. So I looked for ways to get more “healthy” foods into our diet. Every day I make our smoothies and that has seemed to help a little. I read to add a probiotic into our diet. Kefir is one of the most mentioned probiotic that I saw on the websites. So I got it and tried it out. I have to mention that we are not a family that drinks milk or has a high dairy diet. I do top our meals with cheese but not more that a 1/4 cup at a time. When we need a milk like product we use Almond Milk. We are not allergic to dairy, but it is a choice we make to not have a lot of it. I actually watched a few documentaries this last week and it said that cow milk is actually not made for human consumption. Very interesting.Anyway,  I started adding Kefir to our smoothies and after two days pulled the plug on adding it.

What happened?

I felt fat, bloated, sluggish and worse off. Oh and I gained two pounds in two days. Yikes!  Our oldest son started getting hiccups after drinking it. And since I am breastfeeding Ill add that he was fussier than normal. It is very interesting to see how our bodies react to certain foods. I did not know that our body would react that quickly and make us feel worse.

Today is the first day back to our regular smoothies and we are all good to go. I have my regular boost of energy with the smoothies, our  oldest son did not have hiccups and our little guy has not been fussy.

That just means no milk products. Besides cheese , ha! Also, we are just going to have to deal with getting sick if it means our boy is happy at church. If you are feeling bloated all the time or sluggish check your diet. When I eat a certain way I have tons of energy and lose weight.

I also cannot eat a lot of protein because I will actually gain weight. Even if it is just plain chicken or protein shakes. No matter what the meat of protein alternative, I gain weight. Now, that is quite opposite of what healthy sites or magazines tell you. I think we should listen to what our bodies are telling us. Because we are all different. In this day in age we can learn so much! We should be taking advantage of all the information that is out there. I literally watch a documentary every day on Netflix about foods. Take advantage of it, I really enjoy learning!

Family favorite Healthy smoothie

I have been trying to figure out how to add more veggies and fruits into our family diet. We don’t really have the drive to just eat our veggies. Ha ha.I have tried cooking different ways but it wasn’t enough. And you can only eat so many salads. So I started making smoothies for our family. I wanted to share what I “sneak” into them to make them really healthy for the whole family.

First I put frozen strawberries and blueberries (these bags last us one week) in the blender, add apple juice (we drink almost 2 bottles of Costco Apple juice in one week. In and out of the smoothie) and let it sit for a few minutes to thaw them out a little. I add 3 heaping Tbsp’s of ground flaxseed ( they recommend you add it slow, start out with a TBSP and work your way up), 1 avocado and at least 3 cups of greens (this bag from Costco lasts us one week). Blend it all up and voila, yummy healthy full of greens smoothie. The best part about this is that you can get your greens, flaxseed and avocado goodness all in one and it tastes amazing! I know that it sounds like a whole lot of sugar but natural sugars are ok for us. It is the soda, junk food and white sugars that are the worst for our bodies. Try it out 😀
