Healthy No-bake Energy Bites and Simple To Make

These are a favorite go-to snack for me and my kids. My 3 year old and 1 year old loves them. They do have ingredients in them that you should not give to your child until they are over 1 year old. Just throwing that out there. I have been making a similar recipe for many years now but this one I made a bit healthier so I can kick start my healthy eating. I eat an 80/20 “diet” but I I’m trying to kick it up a notch. I also make these for the women’s event at church and they absolutely LOVE them! I didn’t tell anyone I made them just to see if they liked them, people kept going back to get more. They are also such an easy grab and go snack. I put three into a snack size Ziploc and take it to go. Super easy and healthy.

Ingredients (picture below):

1 Cup Oatmeal

1/2 Cup Peanut Butter (I use natural, super chunky peanut butter to add more crunch to it, YUM!)

1/2 Cup Flaxseed

1/2 Cup Walnuts (I chop them up in the food processor)

1/3 Cup Honey

1 tsp Vanilla

 

Directions:

Put all the ingredients into a food processor and mix. I typically have to scrape the sides 1-2 times in the mixing process. You could just put everything in a mixing bowl and mix until all together if you do not have a food processor.

Put them into the fridge (I just leave them in the food processor) for 30-60 minutes.

Take them out and roll them into small bite size balls.

Put them into a container and put them back into the fridge.

Take out what you need and keep them rest refrigerated.

They are super simple and easy to make.

Simple Two Ingredient Ice Cream

Our family absolutely loves ice cream. If I could eat it all the time and not get fat, I would. But since ice cream is fattening I wanted to try making banana ice cream that I see online a lot. I was skeptical at first but once I tasted it, oh man is it good! I tried strawberry ice cream first and will be testing out different flavors very soon. It is very inexpensive and so darn yummy, you should try it out. It is also toddler and nine month old approved. They absolutely love it! 

Ingredients:

Bananas 

Strawberries

Directions:

Wash, cut the tops off the strawberries and put them in a freezer bag and freeze

Peel the bananas, cut into pieces, put them in a freezer bag and freeze. 

Once frozen, take the bananas and strawberries out. 

Put the bananas in the food processor and blend for about 3 minutes or until it has a smooth/ice cream like texture. 

Out in the frozen strawberries and blend for a minute. It really depends on if you like chunks of strawberries or just smooth. So really gauge the blending on your liking. 

Done

Scoop and serve. It’s hard not to eat a lot at once 😜

Homemade Tortilla’s

Making tortillas at home is super easy. I also really love the fact that you know every ingredient that is in them. Takes about 30 minutes from beginning to end so you can make them last minute.

 

Ingredients:

4 Cups All-Purpose Flour

1 tsp Salt

2 tsp Baking Powder

2 Tbsp softened butter (I used salted)

1 1/2 Cup Water

Directions:

Put flour, salt and baking powder in a bowl and whisk together. Put the softened butter in and whisk together well. Add the water in slowly and mix together. Place onto a lightly floured counter. Knead the dough for a minute or two and then divide into 20 pieces. Roll each piece into a ball.

Preheat a large cast iron pan (Or skillet pan) over medium heat. Roll a ball into a thin round tortilla. Place onto the preheated pan and cook until it bubbles, about 1-2 minutes. Flip to the other side and cook for another minute. Place warm tortilla onto a plate covered with parchment paper. I place a dry and clean kitchen towel over the cooked tortillas.

Goals Met….and Homemade Pizza Recipe

I firmly believe if you set your mind to something you can achieve that goal.

This morning when I put on my pants I was able to tighten my belt one notch!! That is amazing!

My first goal was to lose the weight I gained, check. I was at my pre baby weight way faster than last time. Thankfully! I am also at my first weight goal-125 lbs. That has honestly been my goal almost my entire life. For some reason being this exact weight I feel great! I know that if I were famous I would be considered obese, but I’m not.

The second was to get stronger than I have ever been, check.

I have no idea why it is easier this time around. Maybe I have a bit more motivation since I know I will not be getting pregnant again.

My next goal is to tone up more and lose 5-10 more lbs. I just want to be a bit slimmer and toned more. If they are right about holding onto 10 lbs of fat when you are breastfeeding, then Ill just have to wait for a year and a half if he breastfeeds that long, Lord willing.

I want to encourage to women who have negative people around them. Especially about baby weight. It is possible to lose the baby weight, it is possible to workout when you have children, it is all possible. I am super thankful to have a supportive husband also. Without him, this all would be a lot tougher.

Get up and go.

I used to have all the excuses in the world not to get up and workout but I feel SO amazing after. I just keep going and training my body in different ways so I don’t get caught up in the mundane. I also limit my cardio and lift more weights. I used to be more about cardio but I really want to just tone. I am pushing my body more and more and constantly.

Also, kids love to be active and if you are active with them then you can get a lot of exercise. Don’t forget to eat healthier. I am not the healthiest eater but I do not over eat, that’s for sure. Except when it comes to pizza nights. Every Friday I make homemade pizza…..YUMMY! Speaking of pizza on Friday nights, I am off to start making it! Have a wonderful weekend!

Critics, marriage, babies-let them be your biggest motivators 


The only place to take a full picture of myself is at church. So I took one. Finally. It feels weird to whip out my phone and take a picture. Of myself. At church. But I’ve thought about it week after week and finally did it. I feel SO darn proud of myself in taking control of my weight. 

See. I’m not “into myself”, I don’t think I’m “hot”, I really don’t think I’m pretty if you want to know. But I do know this. I have grown up struggling with my weight. My whole life!  I’ve been on so many different diets, weight lose pills and also tried to be bulimic. Yuck! I lose weight, gain a s*** ton, kinda lose it again, it’s all just vicious cycle. Until I got married…..that’s when I took control of my weight.

People typically say that when you get married you gain the marriage weight. People also told me when I got pregnant that I would never lose my weight. I  was literally laughed at. A lot. By more than one person. I told them that I wanted to be a fit mom and lose all the weight I gained. Good luck, they told me. I was told different stories about how they never lost their weight after pregnancy. What a let down. I was also told it was really hard because I would be SO tired and not motivated. Well crap, I thought. Just one more thing I didn’t need, negativity. I was thinking I really hope I am not like that. It got me down, a lot. It made me feel, well, horrible. And then I thought……CHALLENGE ACCEPTED! 

Here I am two babies later and 20 lbs less than when I got married. 20 lbs!!! I beat all odds apparently. I am that “fit mom” I wanted to be. I have a lot of energy. I like to play with my boys in ways that I would be able to if I had not lost weight. I can run around the playground, go on walks and show my boys what healthy living is. We are far from perfect about what we put in our bodies but we try to lead by example. I try to feed our family good foods but we also treat ourselves to regular junk foods. Remember your kids don’t buy their own foods, we do. Also, what we don’t have at home we won’t eat. I really believe that my consistent working out and watching what I eat has helped me. I drink my Smoothies every morning. Up your fiber content, drink plain black coffee instead of adding junk, drink water and stay positive. My body cannot process high protein amounts so I tend to eat more fiber foods. I do eat ground turkey, brown rice and black beans for dinner a lot! Omg it taste so good. 

Now that I have gotten to my first weight goal I can start to get to my ultimate weight goal. I would also like to be a motivator for others. If I could even just help one person get motivated to eat better and workout I’d be SO happy! I know it’s a new year and people are looking for ways to get their New Years resolution going. 

My advice would be to 

1. Start somewhere. 

2. Start small and work up

3. If someone is not helping you get to your goal but instead getting in the way, fix it. Distance yourself from that person. I had to do that because some people really do not want to see you succeed. I have many examples, if you want to just ask 🙂 I’ve actually stopped hanging out with a lot of people because they were not healthy for me. It might sound hard but it’s not. 

4. Stop making excuses. I’ve heard so many from people about how they cannot lose weight, eat healthy or go workout. Walking outside is free. A few dumbells are really cheap. YouTube exercise videos are free. Eating healthy isn’t that expensive. When I lived in California I used to shop at Sprouts, mega cheap and we had a ton of veggies and fruit. Over here in Virginia…..it’s a little more expensive. But we still buy it! Whole Foods, Trader Joe’s and Harris teeter are our go to for foods. No-GMO’s!!!

5. Start somewhere. Yes, I repeated number one because it is SO important to just start!!

Living simple

I just watched the movie The Minimalists last night and it recharged me. Living simple is something I have been “into” for a very long time. I’m not into collecting stuff or buying stuff to show off. I never have been. I’ve tried it and it really doesn’t make me feel better. 

Here is our story.

When my husband and I got married we had a lot of stuff. Mainly him. I moved into his place and I got pregnant about a month after we got married. We then decided to go buy a house. Like a “normal” person. We had a lot of debt and wanted to get a mortgage to add to our debt. Like normal. We went through 22 offers for homes and finally on the 23rd they accepted. This house was in the booneys of Southern California. We loved it, for the most part. I mean, we had a little over an acre, a simple old house and it was cheap. When we moved we had to get the biggest uhaul, took several smaller trips with our leased vehicle. And filled up friends vehicles for them to bring to our house. That’s a lot of stuff!! When I sat down and did our “budget” and calculated how much debt and money we had I got really sad. My husband wanted me to stay home after giving birth and we simply were in way to much debt. When I calculated how much we needed for me to stay home we actually would have needed $1000 extra just to survive and that would have been without groceries😩 My husband brought up this guy (Dave Ramsey) he had heard about and I researched him. We found his Podcast and after listening to it one time I was hooked! We immediately got on board and we literally sold 90% of our stuff we moved in with. It was kind of hard considering we lived pretty far from the city, but it worked! We turned in our lease and got 2 used vehicle. That lease term was still over a year left and then 3 years of more payments to buy it! Yuck! We paid off our used vehicles in about 6 months or less. Both, yes!  We paid off SO much debt with our “stuff” we didn’t really need. We actually sold SO much stuff that our we became freer in our budget. We had $1000 extra every month! How bout them apples. Ha I made everything homemade- bread, tortillas, pizza, everything. We grew our veggies and had chickens for eggs. It was a very simple life. I loved it! No cable, just Netflix and internet. When we moved over here to Virginia we moved with one car and one of the smallest uhauls they have. It felt great! We do not have a lot of stuff and it still feels great! We recommitted in December to living on a minimal budget so we can move into a house with a yard in June. We want a yard for the kids and dogs. We do not want a huge house but just something with a yard. And not buying! Renting. We will not be ready to buy for a long time. We also just cancelled our cable again and I am very happy about that. I am going back to making things homemade and it’ll help with our budget immensely. I hope that if you are thinking about living simple that I can encourage you. I can try to help you out on how to get back to the basics. We don’t really need stuff to make us happy. Our world has taught us that more is better. If we chase the world things we will never be happy. I hope you find encouragement through our story and if you have questions feel free to ask!

Avocados

I absolutely love avocados. I prefer avocados on my sandwiches over putting mayo or other spreads. I add them in Smoothies, the obvious mexican foods, and I even put them on pizza. It is such a super fruit that we all should be trying to eat. Some people might not want to eat them because they are fat but it’s a good kind of fat.

Since we do not live in California anymore the cost of avocados are a little higher over here on the east coast. I went to Costco and it was $7.99 for a bag! Since I did not want to waste money I made an effort to finish the bag before they went bad. And, to my surprise I succeeded! If you ever are looking for a way to add more nutrients and trash the butter and mayo I’d try switching to avocados. Of course everything is moderation is the best because too much fat isn’t great either. But, this is a great way to switch out the bad. I absolutely LOVE avocado!!!

Getting Back On Track

Since we found out we were pregnant last year we took a pause on getting out of debt. Dave Ramsey recommends pausing paying off debt. Instead you save up the money you would put towards debt just in case there is an emergency/complication with the pregnancy. Now that our baby is born and things are going good we are getting back on track.

One of the main things we did to cut back on costs was not renewing our Costco membership. Costco is a dangerous place. I could go there and easily spend $200….a week!! And that would not cover everything we would need for putting meals together. Spending got a little out of control. So I told my husband I need him to help with our budget and keep me more on track until I get used to it again. I am typically the one who does it all but I wanted to get some help and encouragement from him. So far in the last two weeks we have managed to keep way under budget on groceries. We are also going to eat only healthy foods. We went to Harris Teeter today (my favorite store on the east coast) and got everything we needed for every meal next week and spent $59.00! I know we can cut down more on costs but I really want to get healthy foods still and not just cheap junk foods. We could eat top ramen instead and keep our food bill to $30 or less a week but our medical bills would increase because our health wouldn’t be that good. So we are trying to just balance it all out.

At the end of the month we will calculate what we have saved each week on groceries and apply that to debt. For example: we budget $100 a week for groceries, if we only spend $60 then the left over $40 goes to debt. I feel excited to get back on track with budget and health food.

We also are cutting out extra stuff like going out to eat. That typically can get out of control when you let it. We have been spontaneous in this area and not really controlling it. Not anymore. When I was pregnant the only thing I could stomach most of the time was the Chick-Fil-A Grilled market salad with honey mustard dressing. So it got a little pricey. I really love to cook and eat healthy so its going to be fun to get back to it. I will also be taking a before and after picture of myself and also weigh myself to see if there is a huge difference. I am curious how big of a difference it makes. I will try to update more to hold myself accountable and hope to help others out that want to get rid of debt.

Planning for childbirth

This is the last week before he gets his eviction notice. My bag has been packed for at least a month now. I’m sneaking in protein bars this time around! I literally did not eat for well over 24 hours and that was not good at all. I have to eat every few hours or I get low blood sugar. Not a medical issue I just trained my body to eat throughout the day. And since I will be there alone for a lot of it I am bringing stuff to make me feel comfy. And will be bringing stuff to keep me occupied in the case of having my induction. I will be alone that night (for the induction) as well. I am completely OK with that 🙂

So, every day I pretend like I will go into labor that day.  I have been cleaning every day all day for the last two weeks just in case. That is kind of typical for me anyway because I do not like a messy house. But, I have been stepping it up a notch so my husband will not have to do it as much when he is home. And every week for the last month I am making sure we do not run out of anything that we would typically eat. I have been stocking up on certain foods so we have enough to last us so we won’t have to go for at least the first week that we come home. Last time I did this and it helped a lot. I was not as active and high energy as I am this time around. So it is a lot easier to prepare this time…..which I think is weird because I have a two year old this time around to tend to all day. HA

The main things I am getting done is laundry, cleaning and new exercises. I went to the Dr yesterday and he has not dropped into place yet. And his due date is Saturday 😦 I am not stressed over it but I am bummed nothing has progressed between the last Dr appt and this one. So I went to Target and bought an exercise ball. I have 3 exercises that I will be doing everyday 3 times a day.

  1. Ball bouncing: this is recommended but not a guarantee. This I will be doing 3 times daily for 30 minutes.
  2. Walking: I still go to the gym and walk for 30 minutes. I also am going on at least 3 walks outside daily for about 30 minutes each. Maverick loves it and the dogs….well they like it but the heat is getting to them ha Oh well!
  3. Pelvic tilts: This I will be doing 3 times daily for 3 minutes at a time.

I have read so many ways to induce labor but I do not want to induce him on my own. I just want my body to be more ready than it was last time. Over the 3 day weekend we rode bikes twice daily and it was a pretty hilly ride. I also went to the gym and walked a ton. And that had not helped so if anything this will just make me more toned and not gain so much weight. Thankfully I have not gained a lot of weight so it’ll be easier to lose it this time around. I also feel great because I have been able to exercise this entire pregnancy. I have some super goals after this last pregnancy. I am excited about this! I am also super hungry this week. Super hungry! We shall see if these exercise and my “getting stuff done” will ease the labor stuff. I am hoping so! Less than a week left and we are really excited!!

One week left!

I know, I’m getting huge Haha!

We are really excited that this pregnancy is nearing the end. We get to meet our little guy soon. Our son is really excited to meet his brother. He always wants to lay down with me and put his stomach to my belly and feel his brother move. He always says “Mommy, feel brother”. And when he feels his brother move he gets the cutest “surprised” face and says “Brother moved” and starts giggling. Its so cute! I absolutely love it.

We have scheduled an induction date also but will keep it a secret. I do not want negative talk about inductions or the pressure of “is the baby here yet”. It might sound kind of extreme but I have already had a negative comment from someone about it so I will keep it to myself. And also about me possibly being alone while in labor. We do not have anyone to watch our son so my husband may have to leave the room. I actually am fine with it and do not mind at all. But when I mentioned it to someone they immediately went to “what if something goes wrong”. I just cannot start thinking that way since I already started getting anxiety from giving birth. I am at a “clear headed” stage about birth and really want to keep it that way! ha. Hey, think of it this way. Back in the day no one could be in the room, just the mother. I do not need an audience, ha ha

I also am super happy this is the last week because it is getting really hot here. This week we are at the top the 80’s and being this pregnant….not so much fun.

I am also super happy to have not gained as much weight as last time and just yesterday I detailed our vehicle and got a ton done. I am so thankful to be mobile, working out still and getting stuff done. Last pregnancy was not as “fun” ha!

I have not been blogging a lot in the last half of this pregnancy because I have not thought about it all that much. But, I will be doing more blogging soon. I really love to blog and cannot wait to have more stuff to post!
