Red Velvet Baked Donuts with Cream Cheese Frosting

Ok, so I have to get this out of the way. My donuts are not red because the recipe calls for 1 Tbsp of red dye and we had 1/2 Tbsp…..so we used all the dye colors HA! They are green and might do this for St Patrick’s Day coming up.

I found this recipe about 1 minute after my son and I decided to make donuts. They are amazing!!! So good I wanted to eat way more than one at a time. I highly recommend recipe for baked donuts.

Ingredients:

3/4 Cup Granulated Sugar

1 1/2 tsp Unsweetened Cocoa Powder

1/2 tsp Salt

1/2 tsp Baking soda

1 1/4 cup Unbleached all purpose flour

1/2 cup Buttermilk (I used almond milk and vinegar to make mine)

1/2 cup and 2 tsp of vegetable oil

1 egg

1/2 tsp vanilla extract

1/2 tsp vinegar

1 Tbsp red food coloring

Cream Cheese Frosting Ingredients:

1 cup Powdered Sugar

1 oz Cream Cheese

1/2 tsp vanilla extract

1 tsp of almond milk or regular milk

Directions For The Donuts:

  1. Preheat oven to 350 degrees
  2. Spray donut pan with non-stick spray
  3. In a large bowl add flour, baking soda, salt cocoa powder and sugar. Mix and set aside.
  4. In a medium bowl, whisk together; egg, buttermilk, vegetable oil, vanilla, food coloring and vinegar.
  5. Pour the wet ingredients into the dry ingredients and whisk together. Do not over mix but mix enough so you do not have clumps in the batter.
  6. Fill the donut ring, I filled it to the top of the donut mold but not high enough to cover the middle.
  7. Bake for 12 minutes. Take out of the oven and let them cool on a cooling rack for a few minutes.

Directions for the Cream Cheese Frosting:

  1. Combine the Cream Cheese, powdered sugar and vanilla in a bowl. Mix (whisk) until all together.
  2. Add 1 tsp of almond milk or regular milk and mix until creamy. If you need to add more to get the perfect consistency, add a very small amount at a time.

I dipped the cooled off donuts in the frosting until coated on one half of the donut. You can add sprinkles if you like. And oh my goodness….they taste amazing!! Enjoy!!

Milk Chocolate Fudge

This is an amazing and easy fudge recipe that I just made yesterday. I made a different recipe last week and it was disgusting! That recipe called for baking chocolate and it was gross. This is going to be my go-to recipe when I want fudge. It is really creamy, smooth and melt in your mouth fudge. I always looked forward to the holidays when my mom would make fudge and now I can have a little taste of “home” on the East Coast. Here is the easy recipe, I hope you get to enjoy it as much as we do.

Ingredients:

2 1/2 Cups White Granulated Sugar

3/4 Cup Butter (softened, it makes it easier and faster to cook)

2/3 Cup Evaporated Milk

2 Cups Milk Chocolate Chips (I use Nestle Toll House=Yum!)

7 Ounce Jar Marshmallow Cream (I always use Kraft)

1 tsp Vanilla

Directions:

  1. Line a pan with parchment paper. Typically you would use a 9 inch square pan or in my moms case a cookie sheet for thinner fudge. I used my Cast Iron pan and it was perfect for me. It is a non-traditional shape for fudge.
  2. Use a heavy saucepan (I used my Pioneer Woman dutch oven, I’m trying to not cook with metal). Over high heat, combine; Sugar, butter and evaporated milk. Use a wooden spoon (the best for fudge) to stir slowly until butter melts. Make sure to scrape the sides of pan so you do not leave sugar crystals.
  3. Bring to a full rolling boil, stir constantly with your wooden spoon. Once it is at a full rolling boil turn the heat down to medium and cook it for 5 minutes. Make sure you stir constantly to prevent it from sticking to the bottom and to cook it evenly.
  4. Once mixture is done with the 5 minutes,  test to see if it is done. Fill a little glass cup with ice old water and drop a tsp of the very hot sugar mixture in it. If the sugar mixture can roll into a ball then it is done.
  5. Remove the mixture from the heat and add the chocolate chips. Stir until the chocolate chips are melted and mixture is smooth. Add the marshmallow cream an vanilla and mix really well until smooth. Pour into prepared pan right away.
  6. Let fudge cool down and try not to eat to much of it before then. Ha ha I really love warm fresh fudge so this is VERY hard for me!
  7. Once it is cooled take out of pan with the parchment paper, cute and serve. Make sure to really cover the fudge to prevent it from getting hard.

Irish Egg Rolls and Guinness Dipping Sauce

Just in time for St. Patty’s Day! When I was searching for an appetizer to make for my husbands work I came across this recipe. It sounded good so we tried it. Oh My goodness…they are so delicious. The hubby said these should be a tradition, amen to that! I hope you try this recipe out and love them as much as we do.

Ingredients:

8 Ounces Chopped corned beef

2 Cup shredded steamed cabbage  (Steam the cabbage with the cooked corned beef water to add flavor)

2 Cup diced cooked potatoes (Cook the potatoes in corned beef water)

2 Cup shredded carrots (steam in the cooked corned beef water)

1 Cup thinly sliced onion (steam in the cooked corned beef water)

1 Pack of Egg Roll wrappers

Vegetable oil

Directions:

  1. Heat the oil up on the stove in a deep pan. I used a cast iron pan.
  2. In a bowl mix all the ingredients together.
  3. Lay the egg roll wrappers out on a dry and clean surface one at a time. Dip your finger in water to the edges of the egg roll wrapper, put in as much of the ingredients as you like. The bigger you make them the more likely they will rip when you roll them up. Roll the wrapper up according to the directions on the package and wet the edges again.
  4. Fry about 5 at a time if your pan is big enough. Cook until golden brown, the time will vary. Remove from pan and dry on a paper towel.

Exciting new recipes in the making

My husband has a St Patrick’s day party at work tomorrow. They are having it a bit early. I was trying to figure out which recipe to make. But I wanted it to be an appetizer and still have corned beef. After searching I found a recipe that sounded so darn good. Irish egg rolls. Now hear me out. In egg rolls you normally have carrots and cabbage and some sort of meat. Well why not Corned beef egg rolls? Yum! Then I was trying to figure out the dipping sauce. You cannot eat egg rolls without dipping sauce. Since the sweet and sour sauce we normally eat with our egg rolls sounded gross. I searched and found the perfect dipping sauce recipe……Guinness dipping sauce! How appropriate! Since I had just bought the hubby Guinness this week it was an easy choice. And then I am going to make a dessert. They did not ask me to make a dessert. And, the hubby doesn’t know I am going to make them yet. He will not know until I bring them to his work tomorrow 🙂 I saw on Pinterest a recipe for Green velvet cupcakes with cream cheese frosting. Who does’t like cupcakes? And why not try a new recipe that sounds yummy! I will be posting all the recipes tomorrow after all the fun and yummy cooking/baking are done. I cannot wait! At the moment the Corned beef is cooking (it smells so yummy) and all day I will be prepping for the egg rolls. I will not make the egg rolls until an hour before his party so I can make sure they are fresh 🙂 Stay tuned for all the recipes and how they turned out. Apparently at my husband’s work I am the chef wife….I feel honored 🙂
