Let’s talk Mayo

I went through a period of time where I was grossed out my mayo (mayonnaise). I literally wanted to throw a sandwich at a lady who nicely bought me a sandwich with mayo on it. Just because I hated mayo so much. I know….what I jerk I was for thinking it. I do not think that way these days and would kindly accept it now. She didn’t know. Time changes people right? Yes. Well mayo has a bad reputation, the old styles of mayo that is. I was grossed out by my weight gain (in my early 20’s) that I went to the extreme on dieting. No gluten(That was the worst), no meat (terrible), no junk foods and drinking diet tea that is very unhealthy. So you could imagine what it would have been like to add mayo to anything. Yuck.

Fast forward to better eating habits. I started eating vegenaise which tastes good but it is hard to find. I had been eating that brand for many years. When we moved to Virginia I wanted to find it, so I looked everywhere over here. I couldn’t find it so I was on the hunt to find a better for you mayo. Well I found it and wanted to share. The brand I found is Just mayo. Truly delicious and better for you.  It even tastes better than the vegenaise brand I used to get. Yes I could go with the trend of using avocado as my mayo, but sometimes I just don’t want to use avocado for everything. After all, avocado is HELLA EXPENSIVE now. I would have to spend $20 a week to add avocado to everything. Moderation is key when it comes to avocados. Especially the price. We are on a beans and rice, rice and beans budget now. Ok, so anyway. This just mayo brand is truly the best price, taste amazing and healthier. My main thing that I look for with eating healthier is Non-GMO and no high fructose syrup. This is a Non-GMO mayo. So if you are looking for a better mayo to use, look no further. Just mayo Is perfect!


I also found an affordable, delicious and healthier bread made by a big brand. It is called Whole Grains with Omega 3 ALA made with Flax, Sunflower and sesame seed. It has no High Fructose Corn Syrup or Artificial colors or flavors.  I haven’t looked at the local store for it yet but have been able to buy it at Costco. It tastes amazing with Just Mayo and healthy shredded chicken. Chicken sandwiched are super yummy, higher protein and you get your great grains included! My husband and toddlers love it also. Its a win for all. Hope you get to try out these two brands and let me know how you like it or if you have tried these two brand yet.

Wrinkles, Fine Lines and Dark Under Eye Circles……

We are all unpacked and settled into our new home. We are SO incredibly thankful to have the opportunity to live here. It is our dream spot to live. Seriously 🙂 This is the third time I have gone for a little 3 mile jog with my boys since we moved. The first time it wasn’t humid or hot and I had one boy. The last two times it has been hot and humid and I pushed both boys up and down little gradual hills. I was dripping in sweat when I got home. Thank goodness for that. I love working out and sweating.

Now I can get back to what I was originally going to do. Change my beauty routine. I am getting older as we all know 😉 and that calls for a revamping of my vitamins. I have been researching for about a year or so (I know, a very long time) and finally want to try things out. Since we are absolutely done having babies I can start to look like my husbands girlfriend again 😍 I have about a year left with breastfeeding so I’m trying not to add products but more about changing my diet. I have dark under eye circles and it didn’t start until I starting watching what I ate about 10 years ago. I firmly believe that I have them due to vitamin deficiency or my contacts. If I don’t see improvements in a month or so, I’ll try to go with out contacts. I get plenty of sleep and I drink a lot of water. Maybe hereditary? But I’m going to try my best to get rid of them. I have read many places that you can reverse the effects of vitamin deficiencies without pills and that’s my goal. Plus I love food…..so that’s my best option.

Here are a few things I’m going to try.

1. Apply a very small drop of avocado oil to my under eyes before bed. I read that it is a fast absorbing oil so it doesn’t leave you feeling greasy. Unlike coconut oil. I despise coconut oil. Don’t like it, never liked it.

There are studies saying that avocado oil improves and diminishes fine lines, wrinkles and age spots. Also it lightens dark under eyes. We shall see 🙂 maybe I should bath in it……..ha ha! The more I read about avocado oil, the more I fall in love with it. That’s the only oil I use to cook with now. It has the highest smoking point of any plant oil. Amen to that!

2. Adding more vitamin rich foods into my diet.

Vitamin K especially, which include these foods:

  • Brown rice
  • Eggs
  • Oatmeal
  • Sweet potatoes
  • Milk (I prefer almond milk personally)
  • Walnuts
  • Yogurt
  • Wild salmon
  • Spinach
  • Wheat

Also, vitamin A plays a vital role towards keeping your skin healthy. Vitamin A protects your skin from sun damage and helps repair your skin. It plays a crucial role in keeping the collagen in your skin balanced.

The most concentrated sources of vitamin A are:

  • Sweet potato (it made both lists)
  • Pumpkin (hello fall! I absolutely love fall!)
  • Carrots
  • Squash
  • Green, leafy vegetables

I also read to place pumpkin slices over your under eye area for a few minutes daily. Since they are not in season I’ll wait for fall to arrive.

Vitamin E & C also have anti wrinkle benefits.
This is what I have found online and it’s really great information.
I look forward to taking before and after pictures and let y’all know what has worked and hasn’t worked for me.

Yummy and Healthier Pancakes

Our family absolutely loved this recipe. It’s easy, fast and we had all the ingredients already. Nothing out of the ordinary is needed for these pancakes. I even was able to try out the new avocado oil from Costco. I love the healthier oil options we have these days. (Picture below) I hope you get to make these and enjoy them as much as we all did. And not to mention….toddler approved 🙂


Ingredients: 

1 cup Unbleached all-purpose flour or whole wheat  flour (I used 1/2 cup unbleached flour and 1/2 cup whole wheat flour and only King Arthur brand flour)

1 Tbsp Raw sugar

2 tsp Baking Powder

1/2 tsp Salt

1 cup Silk Almond Milk

2 Tbsp Avocado oil or Melted butter (I used butter the first time around)

1 Egg

1/4 tsp All Spice

Splash of Real Vanilla
Directions:

1. Whisk together flour, sugar, baking powder, all spice and salt in a small bowl.

2. In a separate bowl, whisk together Silk, oil/butter, vanilla and egg.

3. Add flour mixture to egg mixture and stir with a wooden spoon just to moisten—a few lumps are fine.

4. Cook pancakes on a cast iron pan with avocado oil over medium heat. I put just enough oil to cook the pancake, maybe 1/4 tsp.

5. Cook until you see little bubbles and flip, continue cooking until done. Maybe 1 minute longer once flipped.
I served these delicious pancakes with uncured turkey bacon from Costco (I highly recommend this turkey bacon brand-picture below) and scrambled eggs with almond milk whisked into the eggs.

Brown Rice veggie Sushi

Out of trial and error I have truly found the best brown rice sushi rice recipe. Because I absolutely love to share when I find a good thing I couldn’t help but share this one. Sushi rice is not really “healthy” so I wanted to find a recipe I could make at home with brown rice. The first recipe I used was rated 4 stars so I tried it out. Oh my goodness, gross! It was dry, insanely salty and just all around disgusting. I then tried a different recipe and boy is it yummy!! I made vegetarian sushi for my husband and I last night. I surprised him and he loved it! It is super easy and I hope you get the same yummy result that we had.

Brown Rice Ingredients:

1 2/3 Cup Water

1 Cup Brown Rice (I used Della Organic Light Brown Rice from Costco) *picture below

3 Tbsp Rice Vinegar (I used Nakano Organic Rice Vinegar) *picture below

2 Tbsp Sugar (You could get away with 1 Tbsp)

Instructions:

1.In a medium saucepan (I only have a dutch oven size from Pioneer Woman and it worked great) bring water to a boil then add rice. Stir and lower heat to low and cover. Cook for 25 minutes or until tender.

2.In a small saucepan; add vinegar, sugar and salt. Cook on medium heat until sugar dissolved, about 2 minutes. Make sure to stir occasionally. Put pan aside to cool off a bit.

3.  Once the rice is done cooking slowly and carefully stir in the vinegar mixture making sure to coat all of the rice.

4. Set the rice aside to cool down before making the sushi.

 

Ingredients I used for making veggie sushi:

1 Medium size Cucumber

1 avocado

Brown Rice Sushi from above recipe

4 Seaweed papers (the pack I bought had 10 papers)

Sushi mat but not required. It is easy to use plastic wrap to put under the seaweed.

You cannot forget Soy Sauce, we only use   Kikkoman soy sauce

 

Instructions:

  1. Peel the cucumber skin and cut the cucumber in half. Cut the middle part of the cucumber out, it will look like a boat. Then cut the cucumber, lengthwise, into thin strips. Set Aside *picture below
  2. Cut the avocado in half. Take the seed out and take the skin of the avocado. Put the avocado, cut side down, and slice the avocado into thin slices. Set Aside *picture below
  3. Put a piece of plastic wrap (Or sushi mat) down on a clean and dry counter. Put one Seaweed paper down. Wet hands a bit ( Wetting your hands will prevent rice to stick on your hands) and then hand put the rice onto the seaweed. Put a very thin layer of rice on seaweed. Leave about 1 inch of the seaweed on one of the longest side of seaweed free of rice. *picture below. About 1 inch on the opposite side put about 4-5 thin slices of cucumbers. Put about 4 thin slices of avocado on top. *picture below. Slowly roll up the sushi tightly starting on the side with the veggies. Once you are rolled up to the side of the wrap with no rice at the end, wet your finger and wipe the seaweed end and seal together. Set Aside.
  4. Repeat step 3, I was able to make 4 rolls.
  5. Once finished, take a sharp knife and cut the rolls to your desired size. I like my sushi 1 inch thick.
  6. Plate and Enjoy!

 

I hope I explained it in as much detail as needed. And I hope it is not confusing. If you need clarification on anything just ask! I can try to explain it better.

I hope you enjoy the sushi as much as we did! I love love love this veggie sushi and completely believe it taste like the sushi get from the restaurants. I now do not need to spend a ton of money going out to eat sushi 🙂

*You can use any veggies you want, those two are my absolute favorite! I could eat this daily!

Avocados

I absolutely love avocados. I prefer avocados on my sandwiches over putting mayo or other spreads. I add them in Smoothies, the obvious mexican foods, and I even put them on pizza. It is such a super fruit that we all should be trying to eat. Some people might not want to eat them because they are fat but it’s a good kind of fat.

Since we do not live in California anymore the cost of avocados are a little higher over here on the east coast. I went to Costco and it was $7.99 for a bag! Since I did not want to waste money I made an effort to finish the bag before they went bad. And, to my surprise I succeeded! If you ever are looking for a way to add more nutrients and trash the butter and mayo I’d try switching to avocados. Of course everything is moderation is the best because too much fat isn’t great either. But, this is a great way to switch out the bad. I absolutely LOVE avocado!!!

Yummy Taco Seasoned Potatoes 

This is one of our family favorite. It is a meatless meal but super easy to mix it up and put meat on it. This is actually a pretty healthy meal and everyone loves it. And it is really inexpensive.


Ingredients: 

3-4 large Potatoes

3 Tbps Taco Seasoning

1-2 Tbsp Olive Oil

1 can Black Beans

1 Avocado 
Directions:

Preheat oven to 425 degrees

Cut potatoes into little chunks. It doesn’t really matter which shape. I mix it up regularly . 

Put the Potatoes into a bowl and add the olive oil. Mix until all coated. 

Add the Taco seasoning and mix until all coated. 

Put into a greased baking pan, this time I used our cast iron skillet. Put in the oven for 20 minutes and test to see if the Potatoes are soft/cooked. They normally take 40 minutes total but I do not like to over cook them. After the 20 minute mark I will check on them about every 10 minutes. 

Once they are done, put them into a bowl or plate. Add black beans and top with avocado. 


I make many variations of this. You can add cooked ground turkey, shredded cheese and salsa. Making the Potatoes is just the base to so many different meals.

Family favorite Healthy smoothie

I have been trying to figure out how to add more veggies and fruits into our family diet. We don’t really have the drive to just eat our veggies. Ha ha.I have tried cooking different ways but it wasn’t enough. And you can only eat so many salads. So I started making smoothies for our family. I wanted to share what I “sneak” into them to make them really healthy for the whole family.

First I put frozen strawberries and blueberries (these bags last us one week) in the blender, add apple juice (we drink almost 2 bottles of Costco Apple juice in one week. In and out of the smoothie) and let it sit for a few minutes to thaw them out a little. I add 3 heaping Tbsp’s of ground flaxseed ( they recommend you add it slow, start out with a TBSP and work your way up), 1 avocado and at least 3 cups of greens (this bag from Costco lasts us one week). Blend it all up and voila, yummy healthy full of greens smoothie. The best part about this is that you can get your greens, flaxseed and avocado goodness all in one and it tastes amazing! I know that it sounds like a whole lot of sugar but natural sugars are ok for us. It is the soda, junk food and white sugars that are the worst for our bodies. Try it out 😀

My favorite Breakfast and Prenatal Vitamin

I am SO thankful that this pregnancy is better with the food department. The first pregnancy I seriously could not stand anything but muffins for a very long time. This time around I am able to eat a lot healthier and for that I am thankful! My favorite breakfast right now is a piece of Ezekiel bread topped with half an avocado and one-two eggs. The eggs really depend on how hungry I am when I wake up HA HA This is what I have in the morning on a typical day-IMG_6842

It tastes so good and has a lot of nutrition. I do not get the low sodium Ezekiel bread because I typically do not have a lot of salt in my diet already. So the added salt is ok for me. I always start with a cup of black coffee-nothing added. Eat my breakfast and then have a half cup of black coffee after. It is the best way for me to start my mornings.

 

I also take my favorite prenatal every morning with my breakfast. I have found that this prenatal is THE only prenatal that does not make me sick to my stomach. I start this pregnancy taking Nature Made Prenatal…and let me tell you, horrible! I was sick and wanted to throw up all the time. I finally found a store around here that carried the prenatal that I took with the last pregnancy. Once I switched to this prenatal I did not have a sick stomach anymore. I was so happy and also surprised that I made that big of a difference. This prenatal-IMG_7008

has been a lifesaver! If you have a sick stomach maybe try to switch your prenatal brand and see if it makes a difference. This prenatal I used to find in California super easily. But here in Virginia, its hard to find. I hope this helps you! It helped me 🙂

Eating 80/20 (80% healthy/20% who cares) is really a great way to live. I cannot cut everything out, nor do I really want to. I am still healthy, not gaining a lot of weight fast this time around. And, I feel human still. In pregnancy there are times that you may have a big craving that you cannot ignore. But, I have found that I have been able to curb my ice cream want with pineapple, strawberries and blueberries. Try it out and see if it works. If not, oh well HA just try not to indulge all the time 🙂

Easy Football foods

Well, football is officially here and this house is very excited! We are on the east coast now So our games are later and we have to stay up super late to finish the games. A bummer but it means we need more snack foods. I posted a flautas recipe yesterday that would be perfect for snacking on. Today I am sharing my 7 layer bean dip and a look at our football pizza. I make the same recipe for the pizza but just change the ingredients or look. Its fun and cooking should be fun! Here is what our football pizza looked like before I put it in the oven

On to the bean dip recipe.

7 Layer Bean Dip

Ingredients:

Black bean refried beans (or regular refried beans)

Cheese sauce (I used tostitos)

Ground beef (I used taco seasoning for flavoring)

Avocado mashed up

sour cream

shredded cheese

olives

Directions:

In a 9×9 pan spread black beans (the first layer) on the bottom. Next spread cheese sauce over the black beans. Sprinkle the ground beef mixture on top of the cheese. Next, carefully spread the mashed up avocados over the meat. Next, even more carefully spread the sour cream on top of the avocados. I try not to move the avocado mixture when spreading the sour cream so it looks better. Sprinkle on the shredded cheese and after that sprinkle on the olives. And voila! Done! bean dip 4

Dish it up and enjoy. It is super easy, yummy and something you can eat throughout the day. This is one of my favorite football foods.
