Mavericks favorite “Santa Cookies”-Recipe included

Yesterday we made cookies for Santa, they are Mavericks favorite by far. They really are the best! Soft and chewy! And So incredibly delicious! We normally just put chocolate chips on them but maverick wanted to add his favorite candy. Maverick is a chocoholic! Chocolate and m&m’s are two of his favorites. Santa ate the cookies we left him but left a little bit on the plate so Maverick knew he ate his cookies and drank his milk. 

Best Chocolate Chip Cookie recipe ever

Ingredients: 

1 Cup Unsalted Butter (softened) 

1 Cup White Sugar

1 Cup Packed Brown Sugar

2 Eggs 

 2 tsp Vanilla Extract

3 Cups All Purpose Flour

1 tsp Baking Soda

2 tsp Plain Hot Coffee

1/2 tsp Salt

2 Cups Semi Sweet Chocolate Chips (we put in 1 Cup m&m’s and 1 Cup chocolate chips this time) 
Directions:

Preheat oven to 350 degrees

Line cookie sheet with parchment paper.

Dissolve (in a little bowl) baking soda in the hot coffee. Set aside. 

Cream together; Butter, white sugar, and brown sugar until smooth.

Beat in eggs, one at a time. 

Stir in vanilla

 Add baking soda and coffee mixture to the above ingredients and mix. 

Add; flour and salt and mix together. 

Add chocolate chips and mix together, do not over mix. 

Drop cookie batter on parchment paper with cookie scoop.

Bake for 12 minutes and remove. Leave on pan for 2 minutes and then put on cookie sheet to finish cooling. 

Try not to eat them all at once! I hope you get to enjoy these “Santa cookies” as much as we all did!

Most delicious Zucchini Pumpkin Bread Ever

I have been trying to make this new recipe I found for a week now. Ha ha kids…. I was finally able to make it and I am so incredibly happy with this recipe. I have made a few pumpkin bread recipes in the past and this is the most moist and delicious one yet! If you have been searching for a pumpkin bread recipe, make this one! I promise you will not be disappointed. And no, you cannot taste the zucchini in it. Β That is one of the best parts. It does have a lot of sugar and I will be practicing to reduce the sugar content and if I am successful at it I will post it πŸ™‚ I love to experiment with recipes and try to make them healthier when possible. Hope you get to make it and enjoy it as much as I do!

Ingredients:

3 eggs, lightly beaten

2 cups sugar

1 cup canned pumpkin (15 oz)

1 cup butter, melted

1 TBSP vanilla extract

3 cups all-purpose flour

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1/2 tsp ground cinnamon

1/2 tsp ground nutmeg

1/2 tsp ground cloves

1 cup shredded zucchini (I used the smallest side of the grater)

1 cup chopped walnuts (I did not add nuts)

 

Directions:

In a bowl, combine eggs and sugar. Add pumpkin, butter and vanilla. Combine dry ingredients; gradually add to pumpkin mixture and mix well. Stir in zucchini and nuts. Pour into two greased and floured 9-in x 5-in loaf pans. Bake at 350 degrees for 45-50 minutes or until bread test done. Cool in pans 10 minutes. Remove to a wire rack.

Football appetizer

It’s officially football season! Yes!! This was such a fun memory in the beginning of our relationship. We typically do fantasy football and this season he is playing two types so it’s gonna be a fun one! My goal is to try to make two types of foods a week. The idea is to do one appetizer and one meal but it will depend on how things are going. This time I made a simple and easy appetizer. All that is needed is wooden skewers, tater tots, bacon and cheese. And whatever dipping sauce you like. I used barbecue sauce, my husband used ranch and ketchup. 

1. Bake as many tater tots as you want. I made probably 50 tots. Bake for 30 minutes

2. While tots are baking cook the bacon and crumble once done.

3. Take tots out when they are done and let cool for about 5 minutes. 

4. Put tots on skewers and place back on the pan. I put 10 tots on each skewer. 

5.  Sprinkle a little bit of cheese on the tots, sprinkle the bacon crumbles and then more cheese. Put as much or as little as you like. I honestly did not put on as much as I should have. More the better πŸ™‚ 

6. Place loaded tots back in the oven for 5-10 minutes. Just until cheese is melted and a little crispy. 

7. Take out and serve. 

Simple. Easy. Yummy.

The BEST brownie recipe you need to try

I have been making this recipe since I can even remember baking brownies. The only thing I have changed is the Crisco ingredient, I use butter now and it tastes better! I also add more vanilla πŸ™‚

 

Ingredients:

3/4 Cup Cocoa (I used Hershey Cocoa)

2/3 Cup Butter

2 Cups Sugar (I use raw sugar from Costco)

4 Eggs

1 1/2 tsp Vanilla

1 1/4 Cup Flour

1 tsp Baking Powder

1 tsp Salt

 

Directions:

-Preheat oven to 350 degrees

-Spray cake pan with non-cooking spray. I used Pioneer Woman’s 3.6 qt ceramic turquoise baker and it was the perfect size. I have actually used round pans, 9 x 13 size pan and other varieties so choose what you like.

-In a medium size saucepan melt the butter on the stove and then add cocoa in. Set to the side to cool down a bit.

-In a medium size bowl beat eggs and then mix in sugar and vanilla

-When cocoa mixture is cooled off a bit add the sugar mixture and mix well. Set aside.

-In a small bowl mix flour, baking powder and salt together.

-Add flour mixture to saucepan and mix until just mixed.

-Pour into pan and bake for 30-40 minutes or until toothpick tested in the middle of the pan comes out clean.

Apple crisp recipe

I have loved making Apple crisp for the longest time. Our family just went apple picking last weekend and it was so much fun. Here is the recipe that I made. Hope you try it out, it is now our family favorite. Our son loves to cook with me….or eat what I’m trying to make ha ha

   
 

Ingredients:

10 medium apples

1/2 cup white sugar 

1 Tbsp all purpose flour

1/2 tsp cinnamon

1 tsp allspice

1/2 cup water

1 1/2 cup oats (I used regular not quick oats)

1 cup flour

1 1/4 packed brown sugar

1/4 tsp baking powder

1/4 tsp baking soda

1/2 cup butter, melted
Directions:

Preheat oven to 350 degrees

Place the sliced apples In a large mixing bowl. Mix the white flour, cinnamon and allspice together and sprinkle it on top of the apples. Mix the apples thoroughly to make sure all apples are coated. Place apples in a 9×13 inch pan or oven safe pan similar to that size. Pour 1/2 cup water in the pan, I tried not to our it on to many apples. This is so the apples stay coated and the water helps the apples bake better. 

In mixing bowl; mix oats, brown sugar, baking powder, baking soda and melted butter together. Mix with a wooden spoon until it is all “wet” looking.  

 
Sprinkle oats mixture over apples, make sure it is evenly spread. 

  
Place in preheated oven and bake for 45-60 minutes. Apples should be soft. Mine took 60 minutes because I cut apples a little bit thicker. Just check yours at 45 minutes and gauge the cook time from there. 

Take out and enjoy! We love our hot and with vanilla ice cream.

The best Oatmeal raisin and chocolate chip cookie recipe

I have been searching for a really good oatmeal raisin cookie recipe and I finally found it….but added a few things. I hope you make these and enjoy them as much as our family is. 

Ingredients:

2 cups all-purpose flour

1 tsp baking soda

1 tsp baking powder

1 tsp salt

2 tsp cinnamon

1 cup unsalted butter (I leave mine on the counter all night or during the day to naturally soften)

1 cup sugar

1 cup dark brown sugar, firmly pressed

2 large eggs

2 tsp vanilla (sometimes I add 3 tsp, more the better )

3 cups oats (regular oats not instant)

1 cup semi sweet chocolate chips

1 1/2 cup raisins
Directions:

Preheat oven to 350 degrees

Mix together; butter, sugar, brown sugar, eggs and vanilla. 

Whisk together; flour, baking soda, baking powder, salt and cinnamon and add to wet ingredients. To help the flour from being over mixed I mix the dry ingredients into the wet ingredients with a wooden spoon. If you mix the flour ingredients to much it will make the cookies flat and harder. 

Add chocolate chips, oatmeal and raisins. Mix slowly and not to much. 

Use a cookie scoop to on baking sheet. I have three different sized cookie sheets and on the biggest one I have 3 cookies across and 5 cookies down. 

Cook for 12-14 minutes. Since I put in 3 baking sheets I rotate the cookie sheets so the cookies cook evenly. 

Take out, place on a cooling rack and try not to eat to many ha ha

Friday pizza night

Our family tradition is to have Friday pizza nights. It’s like a celebration for making it through the workweek. Yes, I do not go to a corporate job but I am always on call 24/7 so we all get to celebrate our work week πŸ˜‰  so Friday I decided to make a pineapple, broccoli and red bell pepper pizza. Holy cow it was amazing! 

I used my pizza recipe that I posted on my blog. For the toppings I pre cooked them on the stove until they were just barely cooked. I added about a Tbsp of olive oil to add some healthy fats in there. 

  

I have to say, if your are looking to make some yummy, easy and simple pizza this is perfect! Our family loves this pizza recipe and sometimes we make it more than once a week. This is the end products and I wish I made more, maybe tomorrow……ha ha

It’s pizza time!

This is the easiest and yummiest pizza recipe I have made so far! I absolutely love making homemade pizza from scratch and I have different toppings every time! This is a must make recipe πŸ˜ƒ

Ingredients:

1 1/2 cups hot water

1 Tbsp. sugar

1 Tbsp yeast (freischmann’s active dry yeast) 

1/2 tsp salt

1 tsp granulated garlic

4 cups all purpose flour

Directions:

Preheat oven to 425 degrees.

Combine water, sugar and yeast into mixing bowl. I have found that the best way to have a no fail yeast rising is to warm up the bowl you are going to put it in first. I put really hot water in the bowl and let it sit for a minute, dump it out and then add the ingredients. Let it rise for about 5-10 minutes.

Add salt, garlic and flour and mix well. Dough sound not be super sticky. 

I put 1/2 cup flour on a dry and clean surface and roll out into whatever shape you are making your pizza. Today we did a rectangle pan pizza. We do circle, rectangle and hearts normally.

Place dough in a greased pan. I use the Kirkland brand of Pam. 

I roll the sides in

Put on ingredients. I used semi cooked broccoli and onions today. I normally use what we have on hand to save money. 

Place pizza in preheated oven at 425 degrees. I cook the pizza on the second rack from the bottom for 20 minutes and the. I put it on the top rack for 7 more minutes. 

Take it out, cut it up and enjoy!

   
 This really is such a yummy pizza it’s hard to just eat two pieces! 

From start to finish it took me a little less than one hour.

Whole wheat bread with oats and almond milk recipe

I know what some of you might be thinking…..gross! But hear me out. I am experimenting with different recipes to make our “normal” every day’s foods a little bit healthier. I came across a recipe and had to try it out. I altered it a bit and it came out amazing! I have to share my version of this recipe. 

Ingredients:

1 cup water

1 cup almond milk  (I used vanilla unsweetened 30 calorie Silk Almond Milk)

2 1/4 teaspoons (Fleischmann’s active dry yeast)

2 tablespoons honey (sue bee)

4 cups whole wheat flour (King Arthur whole wheat , whole grain flour)

1 cups all-purpose flour (Costco brand)

1 cup rolled oats (Quaker oats, regular)

4 tablespoons unsalted butter, melted and cooled slightly (Costco brand)

1 teaspoon salt (mortons) 

Directions:

In a microwave safe bowl Combine water and almond milk and Microwave for 30 seconds until warm. Add yeast and honey. Let mixture sit until yeast is foamy. 

Pour into mixing bowl

Add flours, oats, butter and salt. Using a dough hook, knead on medium speed about 6 minutes until dough is smooth, elastic and only slightly sticky. Keep dough in bowl and cover with a clean kitchen towel. Let rise in a warm place about 1 hour until doubled. I check mine at about 30 minutes and it’s normally close to doubled. 

When dough is doubled, punch down and transfer to a lightly floured surface. Press into an 9×9 inch square, tuck sides in (about 1 inch each side) and roll up into a log. Press seems together to seal the dough. Transfer to a lightly greased (Pam or butter) 9×5-inch loaf pan, seam side down. Cover with the same clean towel and let rise about 30 minutes until dough reaches the edges of the pan.

Heat oven to 400 degrees F (375 degrees F if loaf pan is dark or nonstick). 

Bake 40-50 minutes. 

You can rotate the pan halfway through but not required. 

Bake until loaf is deep brown on top and bottom sizzles when you tap your wet finger on the bottom of pan. (FYI: That is how our family has always done it but be careful not to burn yourself. I have never burnt myself but if you haven’t done it before just remember to tap the bottom with a wet finger not hold your finger there.)

Let loaf sit for 5 minutes and then remove from loaf pan onto a cooling rack. I normally cut the bread and put butter on it soon after so I get to taste the freshest bread ever πŸ™‚
